Why is fish marinated in salt and turmeric?


Wonder why in traditional Indian cooking fish or meat is never cooked before marinating them in spices like salt and turmeric? Interestingly, in the western and oriental style of cooking fish, meat is often marinated with salt, pepper, herbs and what not! However in India it has always been turmeric and salt followed by other ingredients depending on the dish/recipe. Well, here’s an insight on the age-old cooking tradition and its real reason.
